Juniper is a small bushy shrub that grows about 2-6ft and has needle-like leaves that are silvery-green in colour. The green berries take about 18 months to 3 years to ripen and mature, turning a purple-black colour. The berries are plucked from the branches of the plant once a year, dried and ground before distillation.
