The lime fruit is commonly categorized with lemons, to which it shares many qualities, but the Persian/Tahiti lime is likely a cross between the key lime and lemon. Persian/Tahiti limes are sweeter than Key Limes and are also greener, resulting in a different colour and aroma of oil.
